It's official...I am on VACATION! Yahoo! I commemorated this special day by doing what I do best...baking. I roasted one of the Seminole pumpkins my friend David gave me. Pureed the pulp. Cooked it down to a thick paste with brown sugar. Then I made two batches of Pumpkin Chocolate Chip Cookies...one with the fresh pumpkin, one with canned pumpkin. Both smelled unbelievable as they came out of the oven. I also baked a batch of White Chocolate Blueberry Pecan Cookies. All were individually wrapped, decked out in Fall ribbons and assembled into a gargantuan basket destined for the Fall Festival at the nursery where David works. David and Sheri have invited me to numerous amazing Wednesday family dinners. This was the least I could do to say thanks.
