I thought Sunday was supposed to be a day of rest, but not for me. My Sunday was a day filled with accomplishments. The day began with a home cooked breakfast...an egg sandwich panini with fried egg, cheddar cheese and Serrano ham washed down with a cup of hot coffee. House cleaning was next on the agenda. Floors were mopped. appliances wiped down and furniture dusted. Then I moved on to the yard with a quickie weed pulling adventure, finished just in time to sit down with friends Tom and Chris for a glass of wine and a platter of cheese and crackers. Tom shared some sobering news about the reappearance of his cancer and a scheduled surgery this week to remove a mass in his abdomen. I couldn't stop thinking about him for the rest of the day.
The afternoon was filled with errand running and cookie dough making mixed in with a little NBA basketball. Then it was on to crossing some major items off my to do list that for now will have to remain a mystery. Dinner was simple and delicious. Ryan made a reprise of last week's lemon risotto and I sauteed some shrimp. Dessert was a tiny slice of almond cream cake topped with fresh strawberries drizzled in honey. It was a beautiful, productive day and I hope to follow it up with many of the same.
